MELT-IN-YOUR-MOUTH LEMON BREAD
1 Box lemon cake mix
1 cup boiling water
4 eggs, slightly beaten
1 pkg instant lemon pudding mix
1/2 cup oil

Mix all ingredients together until mixture is smooth and creamy, about 4 minutes. Pour into two loaf pans. Bake at 350 for @ 45 minutes.

GLAZE

1 cup powdered sugar
6 Tablespoons lemon juice
1 Tablespoon margarine, softened

Punch holes in cake and drizzle glaze over cake.

SWEET POTATO MUFFINS

3 cups self-rising flour
1 teaspoon cinnamon
2 eggs
1 cup raisins
1 teaspoon vanilla
2 cups sugar
1 1/2 cups oil
2 cups sweet potatoes, mashed
1 cup pecans, chopped

Mix flour, sugar and cimmamon together and stir well. Mix in cooking oil and eggs. Stir in sweet potatoes, raisins, pecans and vanilla. Line muffin tins with paper liners. Fill cups about 1/2 full. Bake 350 for 30-40 minutes.
This mixture will keep in the refrigerator for 3 days.

I ran across this in the front of one of my cookbooks. I think it's kind of cute.

Eat and enjoy for tomorrow it shows.
You don't need to worry,
You can still see your toes.
Clothes get tighter-scales go higher,
So do like me and blame the clothes dryer.

Lots of great recipes since I've last posted.
This one is Magic Reindeer Food that my kids love making.



Mix up a batch of Magic Reindeer Food and leave out for Santa's reindeer.
This is a great gift idea for school and church parties.

Small Ziplock bag
1/2 cup oatmeal
1/2 cup sugar
1/4 cup red or green sugar crystals

Here is a poem to attach to the bag:
Be sure to take the magic food and sprinkle on the lawn
On Christmas Eve,Santa's reindeer travel miles before the dawn
The smell of reindeer glitter will guide them on their way
And you'll wake up to Santa's gifts next morn on Christmas Day.

Assemble in a zipper bag
1 individual package hot chocolate mix
3 Hersery's chocolate kisses
10-15 miniature marshmallows
1 small candy cane

NUTTY BUDDY PIES

1 (8 oz) cream cheese, softened
2/3 cup cruncy peanut butter
2 cups powdered sugar
1 cup milk
1 large cool whip
3/4 cup cocktail peanuts
Hershey's chocolate syrup
2 large or 3 small graham cracker crusts or chocolate crusts
Cream together cream cheese, peanut butter, and powdered sugar. Add milk, stir till smooth. Fold in cool whip. Pour into crust, sprinkle with crushed peanuts and drizzle with chocolate syrup. Freeze until ready to use. Keep in freezer.

FRUITED CHICKEN SALAD

2 cups diced, cooked chicken (8 oz)
1 cup diced celery
1 cup seedless grapes, halved
1/2 crushed, canned, unsweetened pineapple, drained
2 Tablespoons slivered almonds
1/2 teaspoon salt
1/4 cup sour cream
1 Tablespoon mayonnaise

Combine all ingredients and chill. Serve on lettuce cups.
