Peanut Butter Cookies

Easy Peanut Butter Cookies •1 1/4 cups flour, •1/2 teaspoon salt •1 teaspoon baking powder •1/2 cup shortening •1/2 cup peanut butter •1/2 cup granulated sugar •1/2 cup light brown sugar, packed •1/2 teaspoon vanilla •1 egg
Sift together flour, salt, and baking powder; set aside. Cream shortening, peanut butter, and sugars; beat in vanilla and egg. Stir in flour mixture, blending well. Shape mixture into 3/4-inch balls; place on greased baking sheets. Flatten each cookie with the tines of a fork; dip fork in flour periodically to keep it from sticking to the peanut butter cookie dough. Bake peanut butter cookies at 375° for about 10 to 12 minutes.

Chocolate Chip Cookies •2 1/3 cups all-purpose flour •1/2 teaspoon baking soda •8 ounces unsalted butter at room temperature •1 cup packed light brown sugar •1/3 cup granulated sugar •1 scant teaspoon salt •1 tablespoon vanilla extract •2 large eggs •1 large egg yolk •1 1/2 cups semisweet chocolate chips
Heat oven to 350°. Line a baking sheet with a silicone liner or spray with baking spray. Combine the flour, baking soda, and salt in a medium bowl.
In a mixing bowl with electric mixer, cream butter sugars together until light and fluffy. Beat in eggs, egg yolk, and vanilla. Slowly beat in the flour mixture until blended. Fold in chocolate chips. Using a tablespoon or cookie scoop, drop dough onto a baking sheet, leaving about 2 inches between cookies. Bake for 9 to 12 minutes, or until lightly browned and set in the middle.

Coconut Cream Pie

Coconut Cream Pie 1 cup white sugar 1/2 cup all-purpose flour 1/4 teaspoon salt 3 cups milk 4 eggs 3 tablespoons butter 1 1/2 teaspoons vanilla extract 1 cup flaked coconut 1 (9 inch) pie shell, baked
1.In a medium saucepan, combine sugar, flour and salt over a medium heat; gradually stir in milk. Cook and stir over medium heat until the mixture is thick and bubbly. Reduce heat to low and cook 2 minutes more. Remove the pan from heat. 2.Separate the egg yolks from whites. Beat the egg yolks slightly. Gradually stir 1 cup of the hot mixture into yolks. Return the egg mixture to the saucepan and bring the entire mixture to a gentle boil. Cook and stir 2 minutes before removing the pan from heat. 3.Stir butter, vanilla, and coconut into the hot mixture. Pour the hot filling into the baked pie crust. Cool. Cover and chill to store the pie if not serving immediately

My grandmother use to make these when I was small and I remember she used a fork to flatten them out. Since it's a rainy day here, and I love baking in bad weather,I think I'll make these.

Coconut Red Curry Chicken with Tomatoes
Ingredients: 1 can coconut milk 1-2 tbsp brown sugar 1/2 cup chicken or beef stock 1 tsp red curry paste( you can use more if you'd like the dish to be spicer) 2 tbsp fish sauce 1 pint grape tomatoes 1 can mushroom stems and pieces with juice 1 zucchini(medium size) chopped into small pieces 1 orange pepper9optional; you can use red or yellow medium sized) 3 chicken breasts, cut into 1/2 inch slices 2 tbsp cornstarch mixed with 4-6 tbsp. of cold water 2 cups of jasmine rice
In a two-quart saucepan, add the coconut milk, red curry paste, chicken stock, sugar, fish sauce and tomatoes and simmer over medium heat for eight minutes, stir constantly.
Cook jasmine rice as directed on the package. While coconut mixture is simmering, add the chicken, peppers, mushrooms and zucchini and simmer for another 12 minutes or until the meat is cooked throughly.
Mixthe cornstarch and water together and then add to the pot. Mix until the curry thickens. If it doesn't thicken add more cornstarch and water to it.
Serve over jasmine rice.

Ingredients: 1/2 cup lime juice 1/4 cup cider vinegar 6 garlic cloves, minced 2 tbsp minced fresh oregano, or 2tsp dried oregano 1 tbsp dried corinader 2 tsp pepper 1 tsp salt 1 tsp paprika 8 bone-in chicken breast halves 1/4 cup canola oil
In a large resealable plastic bag, combine lime juice, vinegar, garlic and seasonings; add chicken. Seal bag and turn to coat; refregiate for 8 hours, or overnight.
Discard marinade. In skillet, brown chicken on all sides in oil. Transfer to greased 15-in x 10-in baking pan. bake uncovered at 375 F 30 -35 minutes or until meat thermometer reads 170 F and juices run clear.

Easy Chicken Divan

Simplest Chicken Divan 4-5 cooked, boneless, skinless chicken breasts 2 cans cream of chicken or cream of broccoli soup. 1 pkg sliced Swiss cheese (sandwich type sliced) 2 pkg frozen chopped broccoli 1/2 tsp curry 1 tbsp fresh squeezed lemon juice
Cook the chicken until done. Meanwhile, layer 2 pkg of defrosted chopped broccoli into a 9 x 13 glass baking dish, and then cover with cooked chicken. In medium size mixing bowl, combine the cans of creamed soup with curry and lemon juice. Pour soup mixture over top of chicken. Then, place Swiss cheese slices over the chicken. Bake at 350 degrees for 30-40 minutes.
Roll each loaf of bread into 12-in x 7-in rectangle. Spread mustard to within 1 in of edges. sprinkle each with 2 tbsp parmesan cheese.
Combine pastarami, pepperoni, salami and swiss cheese; sprinkle over dough. Top with remaining parmesan. Brush edges of dough with egg. Roll up jelly-roll style, beginning with long side. Seal edge and ends.
Place seam side down on a greased baking sheet; cut three slits in top of each loaf. Bake at 350 F 35-40 minutes. Slice; serve warm.

Steak Fajitas
Ingredients: 1/4 cup orange juice 1/4 cup white vinegar 4 garlic cloves, minced 1 tsp seasoned salt 1 tsp dried oregano 1 tsp ground cumin 1/4 tsp cayenne pepper 1 lb boneless sirloin steak, cut into 1/4 inc strips 1 medium onion, thinly sliced 1 medium green pepper, thinly sliced 1 medium sweet red pepper, thinly sliced 2 tbsp canola oil, divided 4 to 6 flour tortillas, warmed shredded cheddar cheese, picante sauce and sour cream, optional
In a large resealable plastic bag, combine orange juice, vinegar, garlic and seasonings; add beef. seal bag and turn to coat; set aside. In a skillet, saute onion, peppers in 1 tbsp oil until crisp tender; remove and set aside.
Drain and discard marinade. In same skillet, cook beef in remaining oil 2-4 minutes or until desired doneness. Return vegetables to pan; heat through.
Spoon meat and vegetables onto tortillas. if desired, top with cheese and serve with picante sauce and sour cream.
Stuffing: 1-1/2 cups boiling water 1 cup uncooked couscous 1 medium carrot, shredded 1/2 cup raisins 1/3 cup chicken broth 1/4 cup slivered almonds, toasted 2 tbsp minced fresh parsley
Carefully loosen turkey skin,leaving attached at back. Combine oil, lemon juice, garlic, lemon peel, salt and pepper; spread under turkey skin. Place turkey to one side in shallow roasting pan coated with nonstick cooking spray.
For stuffing, in bowl, pour boiling water over couscous. cover and let stand for 5 minutes or until water is absorbed. Add remaining ingredients; toss to combine. Spoon stuffing into other side of pan, shaping into 8-in x 5-in x 2-in mound. Cover pan; bake at 325 F 45 minutes.
Uncover turkey, leave stuffing covered. Bake 4-50 minutes longer or until meat thermometer reads 170 F. cover turkey with foil and let stand 15 minutes before slicing. Serve with stuffing.

Pumpkin Bread
Ingredients: 1-1/2 cups all purpose flour 1-1/4 tsp baking soda 1 tsp salt 1 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp cloves 1/4 tsp mace 1 cup canned pumpkin puree 1 cup granulated sugar 1/2 cup brown sugar 1/2 cup low-fat non-fat buttermilk 2 large eggs 1/4 cup canola oil 1/4 cup chopped walnuts(optional)
Preheat oven at 350 F. Spray a loaf pan with cooking spray. In a medium bowl, whisk together flour, baking soda, salt and spices. set aside. In a large bowl beat pumpkin puree, sugar, brown sugar, buttermilk, eggs and oil together until smooth.
Stir in flour mixture until just combined. Do not overmix. Fold in nuts, if using. Pour pumpkin bread batter in prepared pan.Bake pumpkin bread 50-60 minutes until a knife inserted in the centre comes out clean.
Invert pumpkin bread and cool.

Pumpkin Smoothie
Ingredients: 1/2 cup pumpkin puree 3/4 cup frozen pineapple chunks 1-1/2 cups orange juice 1/2 cup vanilla yogurt 2 tbsp brown sugar 1 whole graham cracker 1/2 tsp pumpkin pie spice cinnamon for garnish
Place pumpkin puree, frozen pineapple in the bottom of a blender or food processor.
Top with orange juice, yogurt, brown sugar and graham cracker.
Puree until smooth, stopping to press pineapple down into the blades of the blender, if necessary.
Pour into glasses and top with a sprinkle of cinnamon. (Did you know cinnamon can control insulin levels. It helps the body from storing fat) Put cinnamon on everything!

Pumpkin Pancakes
Ingredients: 2 cups baking mix, such as bisquick 2 large eggs 1-1/4 cups milk 1/2 cup pumpkin puree 2 tbsp sugar 1/2 tsp cinnamon 1/4 tsp nutmeg
Preheat a griddle to 375 F, or heat a large frying pan over medium-high heat. Whisk together all ingredients until well combined, but do not overmix.
Let rest for 10 minutes. Turn griddle down to 350 F. Ladle quater-cupfuls of the batter onto the griddle. Cook until the edges of the pancakes start to set and bubbles start to form on the surface of the pancakes.
Flip. Cook another 1-3 minutes until pancakes are golden brown on the other side.
Serve immediately with syrup and butter.

Sweet and Spicy Chickpeas(My favourite)
Ingredients: 2 tins of chickpeas drained 1/2 can diced tomatoes 2 cloves garlic, minced 1 small piece of ginger, grated 1 large onion finely diced(you can do this in a food processor) 1/2 can of coconut milk 2 tbsp of red chili powder(Indian variety) 2 tbsp of a good curry powder 1 tsp sugar 4 tbsp of melted butter or vegetable oil
In a large pot, slowly heat the butter and then add the onion, ginger and garlic. Saute for 5 minutes on a medium temperature, do not brown.
Now add the curry and chili powder cook the spices for about 30-40 seconds or until very fragrant.
Add the chickpeas and tomatoes, and bring to a boil, turn down to a simmer and cook until it has thickened to your desired consistency. Now add the coconut milk and cook for an additional 10 minutes.
