Easy And Tasty Lentil Soup

Ingredients
one can of lentils 400g
Salt, pepper, olive oil
1 onion, chopped
1 carrot, chopped
1 large potato, chopped
Chicken or vegetable stock 1 liter

Instructions
Fry the onion and fry for few minutes in a big saucepan with olive oil. Add diced carrot and potato. Add lentils. Add stock.Cook for 20-25 minutes. Add salt and pepper .

Easy and Tasty Spaghetti Sauce
Great to make when you are in a hurry !

2 teaspoons olive oil
1/2 small onion, chopped
2 green onions, chopped
2 teaspoons crushed garlic
1 (28 ounce) can peeled and diced tomatoes
4 teaspoons dried basil
4 teaspoons dried oregano
1 teaspoon white sugar

In a large saucepan heat oil over medium heat. Saute onion, green onion and garlic. When onions are clear, stir in tomatoes, basil, oregano and sugar. Bring to a boil, reduce heat to low, and simmer for 20 minutes.

No Bake Cookies for Children to Make

2 cups sugar; 1/2 cups butter ;3 Tablespoons cocoa
1/2 cup milk; 3 cup oatmeal; 1 1/2 teaspoon vanilla
wax paper

Directions:

Have your wax paper spread and ready for the cookies.

An adult can assist with the boiling part. Boil together sugar, butter, cocoa and milk for approx 2 1/2 minutes stirring constantly.

Remove from heat and add vanilla and oatmeal. Stir quickly.

Drop by spoonfuls onto wax paper.

Refridgerate to harden. YUM!!

Thank for this recipe for kids. My two oldest ages 4 & 5 will love making this. The oldest, Elizabeth, loves helping in the kitchen so I'm glad for this easy recipe.

Veggie "Pitawich"
Ingredients
2/3 cup Hidden Valley® The Original Ranch® Garden Vegetable Dressing
4 cups Cubed tomatoes, seeded
2 cups Diced English cucumbers, seeded
1 cup Diced bell pepper, assorted colors
1/4 cup Minced Italian parsley
1/4 cup Minced mint leaves
1 tablespoon Ground cumin
6 Pita pocket breads, cut in halves
Salt & pepper to taste
Preparation
Prep Time: 30 min.

Combine all ingredients together just before serving. Stuff the pocket halves with the vegetable mixture.

Serves: 6

Note: For a heartier pita sandwich, add some cold, diced, cooked chicken

Here are a few of my favorite cookie recipes that I love to make at Christmas time. I started using cake mix many years ago, and the cookies always turn out beautifully. I'm looking forward to having a bake day with my soon-to-be three year-old grandson this Christmas.

Lemon Cookies
1 box Duncan Hines Lemon Cake Mix
1/2 cup (1 stick) melted butter
2 eggs
1 can Duncan Hines Lemon Frosting

Mix all ingredients until well blended. Dough will be stiff. Form into one inch balls and bake in 375 degree oven for 9 to 11 minutes. Let cool completely before frosting with Lemon Icing.

Chocolate Chocolate Chip Cookies
1 box chocolate fudge cake mix
1/2 (1 stick) melted butter
2 eggs
1/2 cup mini chocolate chips

Mix all ingredients until well blended. Dough will be stiff. Form into one inch balls and bake in 375 degree oven for 9 to 11 minutes.

I also substitute the chocolate chips with White Chocolate Chips for a nice variation.

Raisin Spice Cookies
1 box spice cake mix
1/2 cup (1 stick) melted butter
2 eggs
1/2 cup raisins

Mix all ingredients until well blended. Dough will be stiff. Form into one inch balls and bake in 375 degree oven for 9 to 11 minutes.

Carrot Raisin Cookies
1 box carrot cake mix
1/2 cup (1 stick) melted butter
2 eggs
1/2 cup raisins

Mix all ingredients until well blended. Dough will be stiff. Form into one inch balls and bake in 375 degree oven for 9 to 11 minutes.

Cream Cheese Frosting
1 box 10x confectioner's sugar
4 oz cream cheese, softened
1 stick butter, softened
1 tsp vanilla
4 tbs half & half

In large bowl, blend all ingredients until frosting is smooth. If icing is too thin, add a little more confectioner's sugar.

I usually ice the Raisin Spice and Carrot Raisin cookies with the cream cheese frosting once the cookies are completely cooled.

With all of the wonderful cake mixes available now, you can bake quite a lot of different cookies to share with your family and friends. And, I guarantee both kids and adults alike will love them. Enjoy!

Here is a recipe that is one of our family favorites during the holidays.

HOLIDAY FRUIT DROPS


1 cup shortening
2 cups brown sugar (packed)
2 eggs
1/2 cup buttermilk
3 1/2 cups flour
1 tsp soda
1 tsp salt
1 1/2 cups broken pecans
1 cup candied cherries
1 cup candied pineapple
2 cups cut up dates

Mix shortening, sugar and eggs well. Stir in buttermilk. Measure flour by dipping method or by sifting. Blend dry ingredients and stir in. Stir in pecans, cherries, pineapple and dates. Chill 1 hour.
Heat oven to 400 degrees. Drop rounded teaspoonfuls of dough about 2-inches apart on lightly greased baking sheet. Place a pecan half on each cookie, if desired. Bake 8 to 10 minutes until almost no imprint remains when touched lightly. Makes about 8 dozen.
Note: If you use self-rising flour, omit soda and salt.

These are really delicious. I'm not a fruitcake person, but these are much better.

Here's another one that's good for holidays
or for that matter, anytime.

Chocolate Marshmallow Bars

10-oz semi-sweet chocolate morsels
10-oz butterscotch chips
1 cup peanut butter, smooth
Melt in microwave and stir till smooth.
Add
10-oz bag miniture marshmallows
1 1/2 cup cocktail peanuts
Mix
Spray 9x13 pan with pam. Spread and refrigerate.

These freeze beautifully.
I told everyone when I started posting that I'm
a sweets person.
