Quote calliope: Mama posted sooooo many recipes here. We should try to keep it going for her. I don't have anything great to share now but I am looking for a good lemon bar recipe for next weekend. Mine alwys seem to be too loose. I haven't made these in a long time- but they are so good- Lemon Bars: Preheat the oven to 350 degrees F Crust: 2 cups flour 1/2 pound unsalted butter, at room temperature 1/2 cup granulated sugar 1/8 teaspoon kosher salt Filling: 3 cups granulated sugar 6 extra-large eggs at room temperature 2 tablespoons grated lemon zest (4 to 6 lemons) 1 cup freshly squeezed lemon juice 1 cup flour Confectioners' sugar, for dusting For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment. Combine the flour and salt and, with the mixer on low, add to the butter until just mixed. Dump the dough onto a well-floured board and gather into a ball. Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides. Chill. Bake crust for 15 to 20 minutes, until very lightly browned- cool on a wire rack. Leave oven on- For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30 to 35 minutes, until the filling is set. Cool to room temperature. Cut and dust with confectioners sugar. |

That sounds perfect. Do you chill the dough and then bake it cold? |

Yum, I was looking for an easy chicken recipe, this is going to be Wednesday's dinner, hubby wants sausage & peppers tonight on the grill, it's gorgeous outside. I feel sad about Mama. |

Quote HOT PINK: Cadbury's Chocolate Cake You can use a Bundt pan for this recipe, but a large Loaf pan is also good to use and you make cupcakes with the remaining batter. 2-1/2 cups self rising flour 1-3/4 cups sugar 2 sticks butter, softened to room temperature 1/2 cup Canola Oil 1 pkg instant chocolate pudding (you can also use sugar free) 3/4 cup Nesquik or 1/2 cup unsweetened cocoa 4 eggs 2 tsp. vanilla 3/4 to 1 cup milk (I usually start with 3/4 cup and add more if batter is too thick) 3 large bars of Cadbury's Milk Chocolate Candy, broken into pieces Beat butter and sugar until creamy. Add flour, sugar, Canola oil, pudding and Nesquik (or cocoa), eggs and milk and beat for 7-8 minutes until smooth and creamy. Stir in vanilla and mix well. Batter should be moderately thick. Pour half of the batter into prepared Bundt or Loaf pan. Place several pieces of the Cadbury's candy pieces on top, then add another layer of batter. Bake 45 to 50 minutes (or until inserted toothpick comes out clean) in Preheated 350 degree oven. Let stand about 10 minutes before removing from pan. If you make cupcakes, you can put a couple of pieces of the Cadbury's candy on top of them as soon as they come out of the oven. Top cake with as many pieces of Cadbury's Milk Chocolate candy as you'd like and let melt; then spread evenly over cake or cupcakes. Please note: I always place cakes on oven-safe plates in case the candy doesn't totally melt; if that happens I put the cake in the still hot (but turned off) oven for a couple of minutes until the candy melts. I'm glad you folks decided to keep this thread going. Although I don't post, I love reading all the recipes. Hot Pink This cadbury cake sounds yummy. I'm going to have to try it. I've tasted brownies made similar, just put 1/2 of the brownie mix in a pan,(9x13) layer large candy bars, such as symphony, then put last of brownie mix and bake. It's very rich but very good. |
