Open-Faced Broiled Roast Beef Sandwich -- Servings: 4

Ingredients:
1 1/2 cups sauerkraut
1 tablespoon Dijon mustard
3/4 cup barbeque sauce
4 hoagie buns or kaiser rolls
2 cups sliced roast beef
4 slices shredded pepperjack cheese

Directions:
1. Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
2. Stir the sauerkraut, mustard, barbeque sauce, in a microwave safe bowl. Cook in the microwave on high until slightly bubbly and thickened, about 3 minutes. Meanwhile, place the buns onto a baking sheet, and top with the roast beef and sauerkraut sauce. Place a slice of cheese on each bun.
3. Broil in the preheated oven until the edges of the bread are slightly blackened, and the cheese is bubbly, about 3 minutes.

Bacon and Cream Cheese Deviled Eggs -- 24 servings

Ingredients

1 dozen egg
4 ounces cream cheese
2 teaspoons mustard powder
1/4 cup ranch dressing
3 slices bacon
salt and pepper

Directions

Hard boil eggs, then place in ice water to cool, at least 10-15 minutes. Peel, cut in half and scrape yolks into a large mixing bowl.
Fry bacon up in a pan, until crispy. Drain on paper towels, and crumble once cool enough to handle.
Cut cream cheese into bite-size pieces, and add to yolks. Begin to beat with a hand mixer on low. Add mustard powder and then begin to pour ranch into bowl in a thin stream. The desired texture is a thick filling, just wet enough to form a paste and be blended by the hand mixer. Turn mixer up to medium-high and whip until slightly fluffy and able to form stiff peaks (doesn't take very long). Add crumbled bacon pieces and mix just until blended through.
Fill whites with filling and refrigerate until ready to serve.

White Chocolate Fruit Tart -- Servings: 12

Ingredients:
3/4 cup butter, softened
1/2 cup confectioners' sugar
1 1/2 cups all-purpose flour

FILLING:
1 (10 ounce) package vanilla or white chips,
melted and cooled
1/4 cup heavy whipping cream
1 (8 ounce) package cream cheese,
softened 1 (20 ounce) can pineapple chunks,
undrained
1 pint fresh strawberries, sliced
1 (11 ounce) can mandarin oranges, drained
2 kiwifruit, peeled and sliced

GLAZE:
3 tablespoons sugar
2 teaspoons cornstarch
1/2 teaspoon lemon juice

Directions:
1. In a small mixing bowl, cream butter and confectioners' sugar until light and fluffy. Gradually add flour; mix well. Press into an ungreased 11-in. tart pan with removable bottom or 12-in. pizza pan with sides. Bake at 300 degrees F for 25-30 minutes or until lightly browned. Cool on a wire rack.

2. For filling, in a small mixing bowl, beat melted chips and cream. Add cream cheese and beat until smooth. Spread over crust. Refrigerate for 30 minutes. Drain pineapple, reserving 1/2 cup juice; set juice aside. Arrange the pineapple, strawberries, oranges and kiwi over filling.

3. For glaze, in a small saucepan, combine sugar and cornstarch. Stir in lemon juice and reserved pineapple juice until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Cool; brush over fruit. Refrigerate for 1 hour before serving. Refrigerate leftovers.

Sturdy Whipped Cream Frosting -- Servings: 12

Ingredients:
1 (8 ounce) package reduced-fat
cream cheese, softened
1/2 cup white sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups heavy cream

Directions:
1. Combine the cream cheese, sugar, vanilla extract and almond extract in a large mixing bowl or the bowl of a stand mixer. Fit the mixer with the whisk attachment and mix on medium speed until smooth. While the mixture is still whipping, slowly pour in the heavy cream. Stop and scrape the bottom of the bowl a couple of times while you continue whipping until the cream can hold a stiff peak.

Brunch Enchiladas -- Servings: 10

Ingredients:
1 pound cooked ham, chopped
3/4 cup sliced green onions
3/4 cup chopped green bell peppers
3 cups shredded Cheddar cheese, divided
10 (7 inch) flour tortillas
5 eggs, beaten
2 cups half-and-half cream
1/2 cup milk
1 tablespoon all-purpose flour
1/4 teaspoon garlic powder
1 dash hot pepper sauce

Directions:
1. Place ham in food processor, and pulse until finely ground. Mix together ham, green onions, and green peppers. Spoon 1/3 cup of the ham mixture and 3 tablespoons shredded cheese onto each tortilla, then roll up. Carefully place filled tortillas, seam side down, in a greased 9x13 baking dish.
2. In a medium bowl, mix together eggs, cream, and milk, flour, garlic powder, and hot pepper sauce. Pour egg mixture over tortillas. Cover, and refrigerate overnight.
3. The next morning, preheat oven to 350 degrees F (175 degrees C).
4. Bake, uncovered, in preheated oven for 50 to 60 minutes, or until set. Sprinkle casserole with remaining 1 cup shredded cheese. Bake about 3 minutes more, or until cheese melts. Let stand a least 10 minutes before serving.

mamabling do you cook this fabulous everyday? I have never been one to enjoy cooking but now that I moved and have a bigger kitchen it is more fun. Trying to fix new things when I can. My hubby and I are so tired of eatting the same things all the time. My kids are so picky but there is several on here that I seen on the first 2 pages that I think they will eat so thank you so much! I don't have a lot of time to cook with kids activities and my job but I can start things and have them cook all day since I am home with my daycare kids.

Strawberry Torte -- servings 12

Ingredients:

11 ounces cream cheese, softened
3/4 cup white sugar
2 teaspoons vanilla extract
1 pint heavy whipping cream
2 (12 ounce) packages ladyfinger cookies
1 (16 ounce) package frozen strawberries
1 tablespoon cornstarch

Directions:

Strain strawberries and set aside, reserving juices. In a saucepan bring cornstarch and strawberry juice to a gentle boil. Remove from heat and let cool.
Whip cream cheese, sugar, and vanilla together.
In a separate bowl beat whipping cream until stiff peaks form. Fold whipped cream into cream cheese mixture.
Arrange ladyfingers around sides and bottom of the 8 or 9 inch springform pan, standing ladyfingers lengthwise around sides of pan. Pour 1/2 of the filling into the pan, then place a layer of ladyfingers on top of filling. Pour remaining filling over ladyfingers.
Spread strawberry sauce over top of cake and place the whole strawberries on top. Refrigerate and remove from pan once thoroughly chilled.

Roast Sticky Chicken-Rotisserie Style -- Servings: 8

Ingredients:

4 teaspoons salt
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon white pepper
1/2 teaspoon cayenne pepper(optional)
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 onions, quartered
2 (4 pound) whole chickens

Directions:

In a small bowl, mix together salt, paprika, onion powder, thyme, white pepper, black pepper, cayenne pepper, and garlic powder. Remove and discard giblets from chicken.

Rinse chicken cavity, and pat dry with paper towel. Rub each chicken inside and out with spice mixture. Place 1 onion into the cavity of each chicken. Place chickens in a resealable bag or double wrap with plastic wrap. Refrigerate overnight, or at least 4 to 6 hours.
Preheat oven to 250 degrees F (120 degrees C).

Place chickens in a roasting pan. Bake uncovered for 5 hours, to a minimum internal temperature of 180 degrees F (85 degrees C). Let the chickens stand for 10 minutes before carving.

Krautburgers -- 6 servings

3 slices Roseland bacon, chopped
1 onion, chopped
1 Jonathan apple, cored and chopped
1/2 lb sauerkraut, rinsed and drained
1 lb Parkview fully cooked Polish sausage
6 whole wheat English muffins, split and toasted

Heat a heavy nonstick skillet over medium-high heat. Cook bacon 3 minutes. Add onion and apple and sauté 2 minutes. Reduce heat to low and stir in sauerkraut. Simmer 10 minutes, stirring frequently. Meanwhile, grill or broil kielbasa 6 in. from heat 10-12 minutes, turning occasionally, or until heated through. Diagonally cut sausage into .25 in. slices and arrange on one half of the muffins. Top with sauerkraut mixture and remaining muffin halves.

Easy Baked Chicken Cordon Bleu -- Servings: 6

Ingredients:
6 skinless, boneless chicken breast halves -
pounded to 1/2 inch thickness
6 string cheese sticks(i use sliced cheese)
6 slices ham
1/2 cup butter, melted
1 cup seasoned dry bread crumbs
toothpicks

Directions:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Lay out the pounded chicken breasts on a clean surface. Place a slice of ham on each piece, then one stick of cheese. Roll the chicken up around the cheese and ham, and secure with toothpicks. Dip each roll in melted butter, then roll in bread crumbs. Place in a shallow baking dish.
3. Bake for 40 minutes in the preheated oven, or until chicken is browned and juices run clear.

Jay's Signature Pizza Crust -- Servings: 15

Ingredients:
2 1/4 teaspoons active dry yeast
1/2 teaspoon brown sugar
1 1/2 cups warm water (110 degrees F/45
degrees C) 1 teaspoon salt
2 tablespoons olive oil
3 1/3 cups all-purpose flour

Directions:
1. In a large bowl, dissolve the yeast and brown sugar in the water, and let sit for 10 minutes.
2. Stir the salt and oil into the yeast solution. Mix in 2 1/2 cups of the flour.

3. Turn dough out onto a clean, well floured surface, and knead in more flour until the dough is no longer sticky. Place the dough into a well oiled bowl, and cover with a cloth. Let the dough rise until double; this should take about 1 hour. Punch down the dough, and form a tight ball. Allow the dough to relax for a minute before rolling out. Use for your favorite pizza recipe.

4. Preheat oven to 425 degrees F (220 degrees C). If you are baking the dough on a pizza stone, you may place your toppings on the dough, and bake immediately. If you are baking your pizza in a pan, lightly oil the pan, and let the dough rise for 15 or 20 minutes before topping and baking it.
5. Bake pizza in preheated oven, until the cheese and crust are golden brown, about 15 to 20 minutes.

Okay mamabling thought I would post a recipe on here so you were not the lone ranger! Just tried this one last night and it was a big hit!

Chow Mein Hot Dish

1 lb ground beef
1 onion chopped
1 c. celry chopped
1 sm can peas and carrots
1 can chicken with rice soup
1 can cream muchroom soup
1 small pkg chow mein noodles
salt and pepper to taste

brown beef and onion. season with salt and pepper. boil celery until tender and drain. mix canned ingredients together add other ingredients and mix well except for noodles and place in baking dish. put 2/3 of noodels on top and bake in 350 oven. for 20 min. remove from oven and stir nooodles into meat. bake 20 min longer and about 5 min before serving top with remaining noodles and bake about 6 min.
