Orange Mustard Sauce

1/4 cup plus 2 Tbsp. orange marmalade
1/4 cup plus 2 Tbsp. orange juice
2 Tbsp Dijon mustard
Combine marmalade, juice and mustard in a small bowl, stirring well. Makes 1 cup
dipping sauce to use with coconut shrimp.

PEACHES & PORK CHOPS

4-5 pork chops
1 Tbsp. oil
1 small onion, chopped
3-4 peaches, peeled, pitted & sliced
1 c. chicken stock
2 Tbsp. brown sugar
1 Tbsp. soy sauce

Brown pork chops in a heavy skillet with a lid. Remove and add onion to skillet and stir. Add all remaining ingredients and bring to a boil. Return pork chops and any juices to the skillet arranging them to be in the sauce. Lower heat to a light simmer, cover and cook approx. 30 min. Remove lid, remove port chops and peaches to a plate and keep warm. Increase heat and cook sauce until it's reduced and begins to thicken. Pour over chops and serve immediately.

Marmalade Sauce for Shrimp or Calamari

Ingredients
1 cup orange marmalade
1/4 cup hot Dijon mustard (Grey Poupon is what I use)
1 1/2 tablespoons hot horseradish
Tabasco sauce, if desired
Directions
Combine all ingredients and blend well.
Can be used immediately, or refrigerate for several hours for flavors to blend.

Use with coconut shrimp or calamari.

PEPPERONI PUFFS

1 c. Bisquick
1 c. shredded cheddar cheese
1 c. chopped pepperonis
1 c. milk
1 bottle of spaghetti sauce (optional)

1. Combine Bisquick, cheese, milk & pepperonis in a bowl.
2. Mix well - do not beat.
3. Spray muffin tins w/ non-stick spray.
4. Fill 2/3 of the cups w/ batter.
5. Bake @ 375 until lightly browned.
6. Take out of the oven and allow to cool.
7. Can be dipped in spaghetti sauce, if desired.

PINEAPPLE CHEESE CASSEROLE

(This does not sound very good, but it is scrumptious! I usually make it during the holidays, and it does not last long! You will definitely enjoy it!)

20 oz. can pineapple chunks
1/2 c. sugar
3 T. plain flour
1 c. shredded cheese
1 stick of butter/margarine
1 c. Ritz crackers

1. Drain pineapples; reserve 3 T. of juice.
2. Add to pineapples ~ sugar, flour and cheese and reserved juice.
3. Pour into greased 1 qt. casserole dish.
4. Crush crackers and mix with butter.
5. Spread crackers on top.
6. Bake @ 350 for 20-30 minutes.

Serves 6-8.

Hey Rudy my friend missed you asked wanna and the other girls what happened to you but they didn't answer me,well i'm glad that you okay.

PIZZA CHICKEN

4 chicken quarters
1 tsp. garlic salt
1/2 tsp. pepper
1 jar (15 1/2 oz.) pizza sauce
1/4 c. sour cream
1 can (4 oz.) mushrooms, drained
1/2 tsp. dried oregano
1/2 c. shredded mozzarella cheese

Preheat broiler to 450. Line baking pan with foil and spray with vegetable spray. Arrange chicken in the pan and sprinkle with garlic salt and pepper. Broil chicken about 15 minutes approximately 6" from the heat until very brown. (Don't turn the chicken). In a bowl, mix pizza sauce, sour cream, mushrooms and oregano. When chicken is browned, remove from oven and lower oven to 350. Pour sauce over chicken and return to oven for approximately 30 minutes or until fork pierces easily. Sprinkle cheese over each piece, then return pan to oven for 5 minutes or until cheese is melted.

Serves 4.

EASY POTATO SOUP

5 or 6 large potatoes
1 onion
1 can of cream of celery soup
2 soup cans full of water
1 (8 oz.) cream cheese, cubed
1 stick butter

Dice potatoes and onions. Mix together in a pot with water to cover. Cook until potatoes are cooked. Drian off water. Pour the can of cream of celery into potatoes and onions and two cans of water. Add the cubed cream cheese. Let cook for approximately 5 to 10 minutes or until soup is hot. Add butter.
