Oven Denver Omelet

Ingredients
8 eggs
1/2 cup half-and-half cream
1 cup (4 ounces) shredded cheddar cheese
1 cup finely chopped full cooked ham
1/4 cup finely chopped green pepper
1/4 cup finely chopped onion

In a bowl, beat the eggs and cream until light and fluffy. Stir in the cheese, ham, green pepper and onion. Pour into a greased 9-in. square baking dish. Bake at 400 degrees for 25 minutes or until golden brown.

Yield 4-6 servings.

Hunan Ribs

Ingredients
2 whole slabs of spareribs, about 4 pounds total
1/2 cup teriyaki sauce
2 tablespoons catsup
2 tablespoons rice wine vinegar
2 tablespoons sesame oil
2 tablespoons Dijon-style mustard
1 teaspoon grated fresh ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder
1/2 teaspoon red pepper flakes

Place spareribs, cutting into serving-sized portions if desired, on a medium-hot grill over indirect heat. Close grill hood and grill for 2 hours, until tender. (Add extra charcoal, if necessary, to maintain grill temperature of 325-350º F.) Meanwhile, stir together remaining ingredients and baste ribs, turning as necessary to coat all surfaces during last 30-45 minutes of grilling.

Serves 4

Chicken, Pork and Smoked Sausage Jambalaya

Ingredients
4 tablespoons vegetable oil, divided
3 pounds broiler-fryer chicken parts
1/2 pound boneless pork, cut into thin strips
1/2 pound andouille or smoked sausage, cut into 1/2-inch slices
1 cup sliced celery
1 cup chopped onion
1 cup chopped green pepper
1 clove garlic, minced
4 cups canned whole peeled tomatoes, coarsely chopped and undrained
1 cup chicken broth
3/4 cup tomato paste
1 teaspoon Tabasco brand Pepper Sauce
1 bay leaf
1/2 teaspoon salt
1 teaspoon dried oregano leaves
1 teaspoon dried thyme leaves
1/2 teaspoon ground allspice
1 1/2 cups uncooked rice

In 5-quart Dutch oven or saucepot, heat 2 tablespoons oil over medium-high heat. Add chicken and brown on all sides, about 10 minutes. Remove.

Heat remaining 2 tablespoons oil in saucepot. Add pork, sausage, celery, onion, green pepper and garlic; stirring frequently, cook 8 to 10 minutes or until tender. Stir in tomatoes, broth, tomato paste, tobasco pepper sauce, bay leaf, salt, oregano, thyme and allspice.

Return chicken to saucepot. Cover; reduce heat and simmer 10 minutes. Stir in rice. Cover. Stirring frequently, simmer 40 minutes or until chicken and rice are tender, adding additional broth if rice begins to stick to bottom of saucepot.

Makes 8 servings.

Turtle Cake

Ingredients
1 box 918-19 ounces) German chocolate cake mix
1 bag (14 ounces) caramels, unwrapped
1 small can (5 ounces) evaporated milk
2 tablespoons butter or margarine
1 bag (12 ounces) semi-sweet chocolate chips
1 cup chopped pecans

Preheat oven to 350 degrees.

Prepare cake mix in a bowl according to package directions. Pour half of the batter into greased 9" x 13 " Baker. Bake 15 minutes. While cake is baking, melt caramels with milk and butter in a saucepan or double boiler, stirring until smooth. Slowly pour caramel mixture over partially baked cake. Spread evenly.

Sprinkle chocolate chips and 1/2 cup pecans over caramel mixture. Pour remaining cake batter over top, spreading evenly. Sprinkle with remaining pecans. Bake 30 minutes or until center is set. Cool before slicing.

makes 24 servings

Banana-Pecan Muffins

2-1/2 cups flour
1/4 cup whole-wheat flour
3/4 cup sugar
1 teaspoon each baking powder and baking soda
1/2 teaspoon salt
1/4 cup rolled oats
3/4 cups chocolate chips
1/2 cup chopped pecans
3 very ripe bananas, puréed
3/4 cup butter, melted
3/4 cup milk
1/2 cup firmly packed brown sugar
3 eggs, beaten

Preheat oven to 375 degrees. Grease and flour a muffin pan.

Combine flours, sugar, baking powder, soda and salt. Stir in oats, chocolate chips and nuts.

In another bowl, whisk together remaining ingredients Add to dry ingredients until just combined. Do not overmix.

Pour batter into pan. Bake 25 to 30 minutes.

Pulled Pork

1/2 c. BBQ sauce
28oz can Diced tomatoes
1/3c. Brown sugar
2TBSP Vinegar
1 TBSP. Worcesteshire Sauce
1 TBSP. Soy Sauce
1 TBSP. Cumin
1TBSP. Chili Powder
1 TBSP. Paprika
1 TSP. Garlic Powder
1 TSP. Cayenne

Use bone in country style spare ribs or roast. Cook on low for 8-9 hours in crock pot.

I make it like that with mashed potatoes then pulled pork with left overs. I also add jalapenos to mine.

Pumpkin Whoopie Pies

Cookie

3c. All Purpose Flour
1tsp. Salt
1 tsp. Baking Powder
1tsp. Baking Soda
2TBSP. Cinnamon
1TBSP. Ginget
1 TBSP. Cloves
2c. Dark Brown Sugar
1c. Vegetable Oil
3c. Pumpkin
2lg Eggs
1tsp. Vanilla

Preheat oven to 350 degrees. Line baking sheet with parchment paper.

In a large bowl whisk flour, salt, baking powder, baking soda, cinnamon, ginger, cloves. Set aside. In another large bowl whisk brown sugar and oil til well combined. Add eggs, vanilla and pumpkin Sprinkle flour mixture over pumpkin mixture.

Drop heaping TBSPs. Bake 12-15 minutes.

Filling

3c. Confectioners Sugar
1 Stick of unsalted butter (room temp)
8 oz. Cream Cheese softened
1 tsp. Vanilla

Mix well and spread between two cookies.

Cheesecake

-Crust
1 1/2c. Crushed Graham Crackers
4 TBSP. Sugar
5 TBSP. Melted Butter

Preheat oven to 300 degrees. Press evenly the mixed crust on the bottom of 10" springfoam pan. Bake 10 minutes.

-Filling
5 Packages room temp. Cream Cheese
1c. Sugar
3 TBSP. Flour
2 TBSP. Vanilla
1c. Sour Cream
4 lg. Eggs

In a mixer cream the cheese til smooth, add sugar. Flour. Vanilla, sour cream, and eggs one at a time. Till well mixed.

Pour on top of crust. Place tin foil under pan and make sure to bring it up around so no water can get in. Place in roasting pan add 2 inches of boiling water. and bake 1 hour. Check and if slightly/lightly golden brown its done, if not depending on ovens, bake 10 minutes longer.

When done turn off oven and place a wooden spoon in the door so its open just a crack and leave 1 hour.

Remove from oven and roasting pan. Let cool. Refrigerate.

Add strawberries, or cherries your choice.

Chicken,artichoke and spinach calzone

1 lb. chicken breast cubed cook seperatley with 2 cloves garic and 1 tbsp butter (set aside).

1 package frozen spinach (Thawed and drained)

1 package frozen artichokes (thawed and drained)

1 cup romano cheese (shredded)

1 cup provolone (shredded or cut small)

pinch of salt and pepper

pinch of thyme

1 egg (scambled)

in a large bowl mix ingredients together. set aside

1 pilsbury pizza roll (in the can)

spread out and put mixture inside. Fold ends over and press down sides (so the mix stays inside)

Follow heating instructions on can.

Cut and let sit for a few then serve and enjoy!

Chocolate Graham Cracker Cupcakes with Toasted Marshmellow

2 1/4c. + 2TBSP Sugar
1 3/4c. Flour
3/4c + 1TBSP Dutch Process Cocoa
1 1/2tsp. Baking Powder
1 1/2 tsp. Baking Soda
1tsp. Salt
2 Eggs
1c. Milk
1/2c. Vegetable oil
2 tsp. Vanilla
1c. Boiling Water
1 1/2c. Graham Cracker crumbs
1/3c Melted Butter
9oz Bittersweet Chocolate

Preheat oven to 350. Line cupcake tin with standard cupcake liners

Sift 2c. plus 2TBSP sugar, flour, cocoa powder, baking powser, baking soda, salt in the bowl of an electric mixer, mix on low speed.

In a large bowl mix together Eggs, milk, oil and vanilla. Add flour mixture, beat of medium for about 30 seconds. Scrape bowl and beat again for 2 minutes. Add boiling water and stir to combine. Set batter aside.

Place graham cracker crumbs, 1/4c sugar, melted butter in a large bowl and mix till combined.

Place 1 TBSP graham cracker crumbs in the bottom of each muffin cup. Add tsp of chocolate on top of crumbs. Bake about 5 minutes.

Remove from oven and fill with 3/4 full of batter. Sprinkle with chocolate and graham cracker mixture. Bake about 18 minutes.

Marshmellow Frosting

8 lg Egg Whites
2c. Sugr
1/2 tsp. Cream of tartar
2tsp. Vanilla

Place egg whites, sugar and cream of tartar in a heat proof bowl of an electric mixer. Set over pot of simmering water. Whisk constantly till sugar is disolved about 3-4 minutes.

Usuing an electric mixer with whisk attatchment start on low speed for a few minuted and gradually increase till on high. Till high peaks form. Add vanilla. And mix till combined.

Frost cupcakes then using a kitchen torch brown the frosting. Carefull not to burn.

NOTE* These are still delicious without frosting.

Thank you ladies this recipes look delicious i have copied them and will certainly try them, i never had a calzone it sounds really good i will make some of the recipes this week
and let you know how they came out.
