No darlin', that's Eppy's tried and true recipe - have fixed it for years - here's the recipe:

1 chicken, cut up
1 can cream mushroom soup
1 can cream celery soup
1/2 can milk
1 cup uncooked rice (I use 1/2 white and 1/2 brown, but it doesn't matter)
1/3 cup wild rice
3 tablespoons butter
1 package dry onion soup mix.

Method:

Heat soups, milk and butter in saucepan
add dry rice(s) only to heat up
add 1/2 the package of onion soup mix
Pour into large baking dish
Lay chicken pieces on top
Sprinkle the remaining onion soup mix over the top.

Cover well and seal with aluminum foil
Bake at 325 degrees for two hours.
Do not peek during baking process or allow steam to escape.

I have been hearing about Eppy's " NO PEEK CHICKEN" for along time and I gotta say that I am soo excited to try it. I copy and pasted the recipe with Eppy's name attached.

I was wondering though do I need to get a whole chicken and cut it up, because of the bones.... is that why you need to bake it for 2 hrs..or can you use chicken breasts and cook for the same amount of time. I have no problem with cutting up a whole chicken..bones and all. Just wondering if the cooking time is the same with the breasts.

Hi Rei1. Some people who have tried this recipe have used the breast meat only and said they have had good luck with it. The rice needs the 2hrs tho to get really soft, so I wouldn't cut down the cooking time. I usually buy a chicken that has already been cut up, or, if you can't find one, get a whole one (usually cheaper) and ask the butcher to 1/2 it for you - then you can just bake the two 1/2 pieces. It's easier than cutting up a whole chicken. After it's baked, it's so tender you can then cut it up into smaller pieces. I hope you like it! I can tell you, the kitchen gets to smelling so good, you can't wait to get it out of the oven!

I think you can get low salt soups. The dry onion soup mix is pretty salty, so I never add additional salt in this recipe. But it really makes a big batch, so I don't think the salt per serving would be that much.

Tri-Tip beef roast, baked potato, poquito beans, salad and grilled french bread. Got a good price on the beef the other day.

yum,yum. sounds good. We are having pork loin cut into chunks & marinated w olive oil, marsala, fresh basil from the garden, & garlic. Cooked with mushrooms, baby white eggplants, & onions. Rice. Romaine salad w garden tomatoes, baby carrots, green onions. And watermelon for dessert. (It's healthy night. I let them eat store bought chicken & cake for supper last night & I ran off to the movies).

boneless, skinless chicken thighs sauteed with onions, garlic, and herbs. Saffron rice. Sour dough bread. Zeloni Salat (cabbage salad). Strawberries & blueberries. And just a smidgen of Lindt Extra Creamy milk chocolate, because I have been good.

Six pounds of broiled chicken (my stepson was having dinner with us), boiled potatoes mashed with sour cream and milk, a garden salad with tomatoes from my garden, fresh cherries, & White Chocolate Cake with raspberry filling.
