Just picked up another batch of avocados, so am going to make some guacamole, tacos, spanish rice and corn/pepper salad.

Jaeger schnitzel with mushroom sauce
Garlic mashed potatoes
Creamed asparagus
Buttered corn

Dessert Bunt cake with lemon frosting.

We are grilling out tonight. Hamburgers and french fries for the husband and kiddies, and for myself, grilled chicken and roasted california blend veggies.

Okay, this is Easter Sunday. What is (or what did you have) for dinner?

I'm having ham, scalloped potatoes, deviled eggs, corn and spinach salad.

Eppy, did we eat together and did not know it??? Same thing ham, scalloped potatoes, deviled eggs, corn and jello for the kids. I am not a fan of ham, but I choked down a slice to make everyone happy. I would have preferred a lasagna.

Oh Hi Brian - long time no see, My friend. Well, I'll be darned, having the same thing for Easter? I'm still eating ham and scalloped potatoes today for leftovers. Maybe I'll throw in some jello too!

If you don't mind would you post the recipe. I'm always looking for easy meals to cook. Family of 6 with 4 busy kids doesn't leave much time for fancy meals!
