So I don't always measure everything out, I am more of an add and taste kind of person (it's really the best way). For the marinade (try to do this at least a couple of hours before. It is worth it.) whisk about a cup of balsamic vinegar, a little bit (just a small squeeze) of mustard, either brown or dijon, a couple of cloves of minced garlic, and steak seasoning (I use a steak rub I bought at costco). Then while you are whisking slowly drizzle in about 1/2 cup of olive oil. The mustard keeps the oil and vinegar from separating. Put the steaks in a Ziploc bag and pour the marinade over it. Squeeze as much air out as you can so that the marinade is saturating the meat and put in your fridge until about 30 minutes before you plan to grill them. Then, I start the artichokes. Clip the tops of the leaves with scissors so that way you don't get poked, and it just looks nice. Then, put your artichokes in a pot with plenty of water and boil covered until when you tug a leaf it comes out. You don't want them cooked most of the way, but not until they are completely tender. While those are cooking, you should start the potatoes and your grill. Try to get medium sized red potatoes. Cut them in half. In a bowl mix together olive oil, salt and pepper. Last time I ran out of olive oil using it for everything else, and vegetable oil worked just fine. Then, roll each potato in the oil mixture so that you coat both sides. Put all of the potatoes on a cookie sheet (with edges) cut side down and pour the rest of the oil over the tops. Put your oven rack all the way to the bottom so that the potatoes crisp up nice. Cook them at 450 degrees (I know it sounds hot but believe me) for 30 minutes. Check them in the last ten minutes though and if they are burning, flip them over but if not don't flip them. Then, when your artichokes are mostly cooked remove them from the pot and let them cool a few minutes. Mix together a couple of cloves of minced garlic, olive oil, salt, pepper and a little bit of lemon juice if you have it. Cut your artichokes in half or quarters, your choice. Use a pairing knife or a spoon and remove all of the choke (all the little needle like things) and the purple tipped leaves. Brush the artichokes with a little of the olive oil mix and throw on the grill for about 10-15min. When they are done drizzle the rest of the garlic/oil mix over them or toss them in the bowl and coat them. They are delicious just like that, but to send it over the edge, sprinkle them with parmesan cheese. Before you grill your steaks, I use that steak rub I told you about though any rub will work, and rubbed the front and back of all of the steaks. I grill them for 6 min on each side (I like mine medium). BTW, I put the potatoes in a bowl afterwards and sprinkled them with chives and parmesan too. Hope this wasn't too confusing for you. You are welcome. It is definitely worth the trouble. Its actually pretty simple. After you have a grilled artichoke you will never go back either. |
