i had chicken natchos at work and went through the drive through on the way home and had part of a bean and cheese burrito and a chicken soft taco. hopefully tomarrow will be better amazing how i work at a restaurant and still don't know what to eat.

Fish fillets
twice baked potatoe's
green bean & tomato salad
brussel sprouts in chesse sauce

just curious, what is shelled pizza?
it is somthing i came up with. take pasta shells boil them. cook ground beef add some pepper and garlic seasing and onions to the meat while it is cooking. combine meat and shells and add a can of pizza sauce mix all together. you can also add other veggies as well. it is really good.

Not dinner but this was my lunch today! It's from Food Network's Barefoot Contessa show

Tomato sandwich with basil mayonnaise

1 cup mayo
10-15 basil leaves, chopped
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon freshly squeezed lemon juice
1 tablespoon extra virgin olive oil
1 teaspoon minced garlic
2 slices country loaf bread
1 ripe tomato, sliced

Whisk all ingredients together, except tomato and bread. Spread mayo mixture on both slices of bread, layer on sliced tomatoes and cut sandwich in half.

Keep in mind this makes enough mayo for several sandwiches. For health reasons I used the Best Foods Canola mayo and also whole grain bread. It was still very delicious.

With all the yummy summer tomatoes just around the corner, I plan on making this sandwich a lot!

One of my favorite things in all the world is a beautifully ripe from the garden tomato and Miracle Whip sandwich.
