I thought this thread might be fun for some because deer season will be opening soon in some states and dove season is already open here in TEXAS. Now in this thread we can discuss the different "types" of wild game that we have tried, friends or family have cooked or grilled, and even give recipes if ya'll want to. I'll start first by saying that my husband loves to hunt not so much fish but that boy can HUNT! He will hunt deer, dove, duck, pheasant, and even wild havelinas. He keeps trying to get me too go, but I have no interest. A large group of our friends are also sportsmen, many moreso than my husband. Most of the men and some of the ladies have come up with some great ways to cook these different kinds of meats. I did mention in another thread called WINE LOVERS that we go to a CHAMPAGNES PARTY every year on New Year's Day besides champagnes there are mostly exotic game served. I will start by mentioning that the very first one I went to had rattlesnake chowder and while I was very hesitant to try it, I did so. It was delicious! If you can actually get over the fact that rattlesnakes bite is poisonous then that is half the battle. I just went for it, besides my husband had taken me to a JAPANESE restraunt and I had recently tried octopus and loved it. I have many more that I can tell ya'll about, but only if ya'll are interested. What do ya'll think?

since my hubby and boys all hunt... we always have a freezer full of venison . i have open ears for any recipes you have for venison. i ground some for chili and stews.
and make lots of jerky. also grill the steaks .

i have learned if you soaked the tenderloin or steak in beef broth or even inject the meat with beef broth, it will help mild down the gamey taste..

here is a really great jerky recipe....


1/4 cup soy sauce

1 tbsp worcheshire sauce

1/4 tsp garlic powder

1/2 tsp onion powder

1 tbsp black pepper

3 dashes of liquid smoke

and add cheyenne pepper to your liking. the more the spicier.

mixed this all up with the ground meat , or roll the strips of meat in it.or choice

also, i have been raised up on wild game so what others might think is extoic may not be for me.

we love squirrel and deer

i have also had rabbit, wild turkey, and quail.
